Dry perch sausage from Aveyron is the flagship product of the greater Causses d'Aveyron region. Dried on a wooden pole, this ancient and authentic method gives the product a unique serpentine shape, with the particular and subtle taste of delicately seasoned meat. Slowly dried for 3 to 5 weeks in our cellars, allowing its natural gray-green flower to develop, it is made from 100% fresh meat from France and without coloring, stuffed into a natural pork casing and attached to string. , which gives it authentic artisanal manufacturing.
